Easter Weekend Recap & A Fruit Pancake Muffin Recipe

If you haven’t heard me say it to you yet, Happy Easter! I know it’s over, but the meaning of it will always carry on. Growing up Easter was always a holiday that was very special in our family. I remember shopping at Burlington Coat Factory for our Easter outfits, and during Easter Sunday getting ready for church to celebrate “He has Risen.” We would then go over to my Nana’s & Papa’s house for a yummy lunch along with our own Easter egg hunt in their yard. Beautiful memories I hold onto.

(And yes, somewhere in there we had Easter baskets & treats, but the funny thing is that doesn’t stand out as much in my memory.)

Since becoming a mom there have been so many memories of my childhood that have been flowing through my memory (and by the way, I don’t have a good memory). It especially happens during the holiday seasons, and during this time all my childhood traditions & events start replaying in my mind.

I so badly want to replicate the traditions that I had during my childhood with our little boy (and future children). Here’s the honest truth though, things are a little different nowadays, so I have to go with what I have and develop new traditions and memories.

Big John & I made a choice 5 years ago to move all the way down to Florida without having any family that lives nearby. So during the holiday seasons we don’t visit, it’s sometimes hard to realize that we won’t be celebrating in person with our extended family members.

Our Easter was a little bit different this year. Big John had to work until 2. We didn’t go to church and haven’t gone in a long time, which is something that I have been dwelling on for a while. AND I definitely didn’t have a meal planned for our Easter dinner.

(I’m not always as planned as I should be.)

totally wasn’t thinking about grocery stores being closed (although I didn’t look into all of them, and I wasn’t about to drive all around town.) Yup, you guessed it. Little Johnny and I were on our way to the grocery store, and when we got there we saw the sign “Closed on Easter”, which I get it & I’m glad that the employees don’t have to work on a holiday, but man! In that moment I was really sad.

On the way home Little Johnny fell asleep and I drove while listening to Country Gospel music. (This music really speaks to my soul.)  In that moment I had so many feelings of sadness. I felt really down and honestly kind of overwhelmed. 

As I got home Little Johnny was still asleep and luckily stayed asleep as I transitioned him into his crib. This gave me time to gather my thoughts and pray for myself to come out of this low moment I was feeling.

After a few minutes I gravitated towards the kitchen and something came over me where I decided to get creative with the food we had in our cupboards & fridge. I honestly felt a sense of comfortpeace come over me. I know it’s silly to get upset over not having a fancy meal, but it was something I so badly wanted to provide for my family. With a little research and some knowledge I picked up throughout this past year, I was able to create a delicious meal.

So, you’re probably wondering why did I share all of this with you? The truth is I’m not quite sure. I think I just needed to write out my thoughts and sometimes I look at this blog as my open diary. So if you made it to this point, thanks for listening. 🙂

So, below was our Easter menu from the scraps within our cupboard, which it’s sort of a weird combination, but in the end it’s all about being tasty, right?!

Our Easter Sunday Menu 

(very non-traditional, if I might add…)


Greek Salad with Toasted Pita Chips & Hummus 

Tuna & Quinoa Patties 


Balsamic Vinaigrette Sautéed Carrots  


Fruit Pancake Muffins

(With a drizzle of syrup & whipped cream.) 


I’m the recipe to this here, because it was so good that my husband said “you need to put this on your blog”. AND he has a HUGE sweet tooth, so you know it’s tasty. My original plan was to make strawberry shortcake, but I didn’t have the ingredients. This was my attempt to make something similar. In one of the mom groups I attend they gave me the idea to place pancake batter into a muffin tin, genius right?! Less time to make, and they’re perfect bite size.  (Especially for little ones.)  I just added a few other goodies to the mixture.


This makes approximately 12 muffins.

-1 cup of frozen mixed fruit

-1/4 cup of pineapple

-1 banana

-1 teaspoon of cinnamon

-1/2 cup of spinach (trust me, it helps to blend together the sweetness of everything.)

-approximately 2 cups of pancake batter (I just used store-bought batter where you only have to add water to the mix.)

-favorite syrup

-whipped cream


  1. Preheat oven to 350 degrees.
  2. Mix the frozen fruit, pineapple, banana, cinnamon, and spinach in a blender.
  3. Mix pancake batter and blended fruit mixture together.
  4. Pour mixture into muffin tins (about 3/4 full).
  5. bake for about 20 minutes or until the center is cooked.
  6. serve with a dollop of whipped cream and drizzle syrup on top!
