Hey mom, what’s for dinner? Let’s make it a BBQ Chicken Garden Salad kind of night!

That’s a question I’m sure many of you have heard before. You know what?!  I can even remember as a child asking that continuously to my mom. I’m so truly sorry about that mom. Dinner time is the time of day that I tend to dread, especially when I haven’t gone grocery shopping in a while, AND there is no way I’m running to the store with an over tired baby and a dog that desperatley needs to be walked! (I call this the witching hour, everybody needs something STAT!) I’m being very bold right now in blogging about a personal recipe. I am by no means a true “chef” in the kitchen, but what I do enjoy is learning from others and trying fun new recipes. 

Here’s the story: It’s a Saturday night, and it’s dinner time. BUT Guess What? I remembered that I have nothing planned for dinner, and I don’t have an “emergency frozen pizza”  on hand (you know what I’m talking about) 😉 So, it brought me to this moment where I rummaged through my fridge grabbed all that I could imagine would taste good together, then BAM! Dinner was served and you know what? I truly made a great dinner! My husband was even impressed, A+ for this mama! (plus for a bonus it was a healthier meal for us)

Without further ado, I present to you my very first documented recipe.

It’s simple, tasty, & fairly healthy!

After discussing with my husband we came up with the name of BBQ Chicken Garden Salad! I find the name of things to be so important, so I needed a little help with this one.

So here it goes, I’m blushing just a little at the moment..:) below you will find the ingredients, and steps on how to make this simplistic, tasty & healthy dinner! I hope you enjoy it!

This is a dinner for 2, but you can always double the recipe.

Rummaging Through the Fridge {Ingredients}

  • 4 chicken tenderloins
  • red, yellow, and orange peppers (I just had a bag of the snack size and used those)
  • bag of baby spinach
  • 1/2 cup of chopped scallions
  • sweet onion
  • 3 squashes
  • 2 corn on the cobs
  • 1 tbsp of paprika
  • 1 tsp of garlic powder
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tbsp of olive oil
  • 1 cup of your favorite BBQ sauce

Time To Prepare {Steps}

  1. fill a big pot with water and bring it to a boil and cook your corn on the cob (view this link to learn how to cook corn on the cob)
  2. Take your chicken tenderloins and spread about a 1/2 cup of BBQ sauce on it (the rest will be saved for the “dressing”)
  3. To cook the chicken I used a grill, but you can use other options as well: George Foreman, oven, or skillet
  4. once the chicken is cooked, cut it into small pieces and set aside
  5. cut your squash, sweet peppers, and sweet onion into small pieces
  6. turn your burner on medium and place 1 tbsp of olive oil into a large skillet
  7. pour 1 tbsp of paprika, 1 tsp of garlic powder, 1 tsp of garlic into the skillet
  8.  saute the diced: sweet onion, squash, and sweet peppers (for about 5 minutes)
  9. meanwhile, cut your scallions and cooked corn then place them into the skillet along with half a bag of the baby spinach
  10. mix all the ingredients for about 2 minutes (just until the spinach starts to wilt)
  11. pour the rest of the BBQ sauce  and 1 tbsp of water into a pot over medium low heat and stir (DO NOT BRING TO A BOIL) let it just get warm for about 3-4 minutes
  12. Finally, spoon the garden salad mixture into your serving bowls and then drizzle the extra BBQ sauce on top (it acts as a “dressing”)

And that’s it! Dinner is served!

We then capped off our evening with a delicious rootbeer float! (we’re not ready for pies yet, it’s still too HOT here in Orlando!)

If you end up trying this recipe, I really hope you enjoy it! I swear I asked my husband a million times if it was good, to the point where he got a little annoyed…oops! Anyways, he is very good at telling me the truth about dinners that just weren’t his favorite. He said this was recipe was tasty, and he even had seconds if that tells you anything.
